
Oklahoma Honey Chicken
Makes 8 servings (picture below)
SEASONING MIX
1-1/2 teaspoons ground ginger
1-1/4 teaspoons salt
3/4 teaspoon paprika
3/4 teapoon onion powder
3/4 teaspoon pure ground California Beauty chile pepper
1/2 teaspoon ground sage
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
16 chicken drumettes (wings with the tip and first joint cut off)
4 tablespoons unsalted butter
1/2 cup finely chopped onions
2 teaspoons finely minced fresh garlic
1/2cup dry sherry
2 tablespoons soy sauce
1/2 cup chicken stock
1/2 cup honey
Preheat the broiler.
Combine the seasoning mix ingredients thoroughly in a small bowl.
Makes 2 tablespoons.
Sprinkle 1 tablespoon of the seasoning mix over the wings and work
it in well with your hands.
Melt the butter in a heavy 12-inch skillet over high heat. When the
butter sizzles, add the seasoned wings. Brown the chicken on one side,
turn it, add the onions and garlic, and cook until the wings are brown on
both sides, about 1O to 12 minutes in all. Add the sherry, soy sauce, chicken
stock, and the remaining seasoning mix and bring to a hard boil. Remove
from the heat, stir in the honey, and let sit 3 minutes.
Remove the chicken wings from the sauce with tongs, place on the
broiler pan in a single layer, and broil, turning once, until brown and
crispy, about 2 minutes on each side. Pour the sauce into a bowl.
Serve the wings immediately and pass the sauce for dipping.
NOTE: This is the chile pepper use. You can use whatever is available
in your area, hut be sure to buy pure ground chile peppers, not commercial
chili powder.
