
Roast Game Hens with Curry Butter
4 Servings
1/4 cup chopped fresh cilantro
5 tablespoons butter, melted
3 tablespoons honey
1 tablespoon grated lemon peel
1 tablespoon grated orange peel
2 teaspoons curry powder
1 teaspoon ground ginger
2 large oranges, unpeeled, cut into 1/4-inch-thick rounds
4 1-1/4-pound Cornish game hens
Cilantro sprigs (optional)
Preheat oven to 375 degrees. Mix first 7 ingredients in small
bowl to blend. Arrange orange slices over bottom of large roasting
pan. Place hens atop orange slices. Sprinkle hens with salt and
pepper Rub half of butter mixture over hens. Roast until hens
are cooked through and juices run clear when thickest part of
thigh is pierced, brushing occasionally with remaining butter
mixture, about 1 hour.
Transfer hens to plates. Garnish with cilantro sprigs, if
desired, and serve.
