
Genuine Southern Fried Chicken
To serve 6
two 3 to 4 lb. chickens, cut into serving pieces
5 cups milk
3 or 4 eggs, beaten
salt
Tabasco sauce
flour
bread crumbs
oil or fat for deep frying
Soak the chicken pieces overnight in the milk, to which the
eggs, some salt and a dollop of Tabasco have been added.
Drain and dry the chicken pieces, roll them in a mixture of
half flour and half bread crumbs, and fry them in deep fat
until they are brown. Finish the cooking in a moderate oven,
preheated to 350 degrees, for 10 to 15 minutes; but do not
allow the chicken to dry out.
Serve the chicken with baked yams, broiled tomatoes
and a tossed green salad.
