
Broiled Chicken Breasts Sesame
To serve 3 to 6
6 chicken breasts, boned
sesame seeds
Marinade
1/4 CUP butter, melted
1/4 CUP soy sauce
1/4 CUP dry white wine
1 tsp. dried tarragon
1 tsp. dry mustard
Mix together the butter, soy sauce, white wine, tarr
mustard, and marinate the chicken breasts in the mixture
for 2 or 3 hours.
Broil the breasts over a medium charcoal fire for 4 or 5
minutes on each side, starting with the skin side up and
basting with the marinade two or three times. Remove the
chicken breasts from the fire, again brush with the marinade,
then roll them in sesame seeds until they are well
coated. Return the chicken breasts to the fire for a minute or
two to brown the seeds. Serve with plain buttered rice.
