
Chicken Pieces Jessica

This is an exciting but messy little appetizer. Offer moistened
rolled-up towels, or damp paper towels if you're entertaining
very informally.
Seasoning mix
1/2teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon dried sweet basil leaves
1/2 teaspoon ground sage
1/4 teaspoon sweet paprika
1/4 teaspoon dry mustard
1/4 teaspoon dried thyme leaves
1/4 teaspoon dried summer savory
1/8 teaspoon black pepper
1/8 teaspoon white pepper
1/8 teaspoon cayenne

4 boneless chicken breast halves sKin and visible fat removed
Vegetable oil cooking spray
1/4 cup white grape syrup
Combine the seasoning mix ingredients in a small bowl.
Sprinkle all surfaces of the chicken evenly with 4 teaspoons
of the seasoning mix.
Preheat a heavy 10-inch sKillet, preferably nonstick, over
high heat to 400 degrees, about 4 minutes.
Lightly coat each side of both breast halves with the vegetable-oil
spray and place them in the skillet. Turn the heat to medium,
cook 1-1/2 to 2 minutes, turn the chicken over, and cook the
other sides. Repeat the process with the other 2 pieces of chicken.
Set chicken aside to cool.
Preheat the broiler.
When the chicken is cool enough to handle, slice it into 1/2-inch
wide strips. Place in a container and toss with the grape syrup.
Arrange on a baking sheet and broil until the chicken is
brown and a sticky glaze forms, about 4 minutes. Then get out
of the way!
