
Oven-Fried Chicken Parmesan
1 cup soft fresh bread crumbs
1/3 cup grated Parmesan cheese
2 tablespoons minced parsley
1/2 clove garlic, peeled and minced
1 teaspoon salt
1/4 teaspoon black pepper
1/2 cup (1 stick) butter or margarine, melted
1 chicken (2-1/2 to 3 pounds), cut into serving pieces
1. Preheat the oven to 400. Butter a 13"x9"x2" baking dish.
In a shallow bowl, combine the bread crumbs, cheese, parsley,
garlic, salt, and pepper. Place the melted butter in another
shallow bowl. Dip the chicken into the butter, then roll
the pieces in the crumb mixture and put them into the baking dish.
2. Pour the remaining butter evenly over the chicken and bake,
uncovered, for 35 to 40 minutes, basting
occasionally with the pan juices. Serve with broccoli.
